Tossing the baby kale in a feel good smoothie like the one below can support getting comfortable with this nutritionally potent cruciferous vegetable in a more flavor friendly manner.

Kale Smoothie

  • 1 c. baby kale
  • 1/2 banana
  • 2 tbsp. walnuts, chopped
  • 1-2 Medjool dates
  • 1/2 c. water
  • 1 c. ice

Directions:

Combine all ingredients in a blender. Add 1-2 dates based on preferred smoothie sweetness. Blend until smooth and serve.

Recipe makes 1 serving.

Each serving is approximately 235 calories, 10 grams of fat, 33 grams of carbohydrate, 3.5 grams of fiber, and 4.5 grams of protein
